γ-PGA(gamma-PGA), full name: Gamma-poly-glutamic acid, is a natural occurring, multi-functional, and biodegradable biopolymer. It is produced through fermentation by Bacillus Subtilis using glutamic acid. PGA is consists of glutamic acid monomers cross-linked between α-amino and γ-carboxyl groups, and the molecular weight of PGA is usually between 100~1000K Da. It is water-soluble, edible and non-toxic towards human, and is environment friendly. It has broad applications in the fields of medicine, food, cosmetics, water treatment and agriculture.
Polyglutamic acid ( PGA ) is a polymer of the amino acid glutamic acid ( GA ). Gamma PGA ( Poly- γ - glutamic acid, γ - PGA ) - the form where the peptide bonds are between the amino group of GA and the carboxyl group at the end of the GA side chain ) - is a major constituent of the Japanese food natto.
